Papa's Chili Steak Sandwich
INGREDIENTS

3 egg yolks 1 tablespoon Dijon mustard 2 tablespoons sherry vinegar salt pepper 1/2 teaspoon crushed coriander seeds fresh coriander, finely chopped 1/2 liter neutral oil |
HOW TO DO IT
Fry the meat for 4-5 minutes on each side. Make sure it gets a good sear and season it well with salt and pepper. Let the meat rest for at least 15 minutes before slicing.
Coriander mayo: Blend egg yolks with mustard, vinegar, salt, pepper, coriander seeds and fresh coriander. Slowly pour in the oil while blending. Finally, season with salt, pepper and vinegar.
Split the baguettes into sandwiches and spread one side with as much Papas Chili Sambol as you can handle and the other side with coriander mayo. Thinly slice the meat and season with salt and freshly ground black pepper. Divide the meat into the sandwiches and fill them well with lettuce, onions and fresh coriander.
