CURRY LEAVES

Curry leaves grow on trees up to 10 meters high, primarily in Southeast Asia, but are primarily grown as a shrub, and are found in most backyards. Our curry leaves come from the area around Kandy, and grow wild in forest gardens surrounded by tropical fruit trees and plants. Despite the name, the leaves do not taste like curry, but have a lovely spicy and warm aroma and a slightly sweet, nutty flavor with citrus notes and a hint of ginger.

Curry leaves are almost mandatory in Sri Lankan and Indian cuisine, where they are the foundation of any good curry. Heat the leaves in a little oil before sautéing meat and vegetables, and let them simmer in the dish. Also try them in spice blends when cooking rice, in flatbreads and relishes, chutneys, sambols.
