TOASTED CURRY

Bathapu Thuna Paha means 'roasted curry powder' and is a traditional Sri Lankan spice blend of cumin, coriander seeds, fennel seeds, curry leaves, pepper and cinnamon, which are first dark roasted before being ground into a powder. The roasting gives a more intense, deep flavour and aroma compared to regular Thuna Paha, where the spices are ground raw.

Our roasted curry is blended by the ladies in the packing house at our spice supplier and is the recipe they use in their own cooking. The blend currently consists of four ground spices: coriander seeds, fennel seeds, cumin seeds and curry leaves.

Roasted curry gives good intensity and depth to dark, dense dishes that need to have a full flavor punch. It is suitable in a frying pan, wok and pot together with, for example, beef and chicken.
