CURRY
There is no single definitive curry blend, and recipes vary from region to region. Each family has their own, which is typically passed down from generation to generation. Our Sri Lankan 'raw' curry powder is an amu Thuna Paha, which means raw three-five, indicating the number of spices. The three essential spices are cumin, fennel seeds and coriander seeds, and in addition, curry leaves, cinnamon bark and more can be added.
Our raw curry is blended by the ladies in the packing house at our spice supplier and is the recipe they use in their own cooking. The blend currently consists of four ground spices: coriander seeds, fennel seeds, cumin and curry leaves.
Our curry is aromatic and mild with a warm, spicy flavour. It is central to many Sri Lankan curries with light meat and fish, as well as vegetarian dishes such as dhal. Its mild, pleasant flavour makes it suitable for a variety of dishes, as well as for marinating and sauces.
