Garcinia Combigia, also known as Goraka or Malabar tamarind, is a tropical fruit native to Sri Lanka and India. The fresh fruit resembles a small pumpkin and grows on large trees in wild gardens surrounded by mangoes, peppers and Jackfruit. When ripe, the fruit is divided into smaller pieces and dried. The taste is sour like tamarind with an underlying depth and notes of dried fruits.
Garcinia provides a nice, pleasant acidity to curries, for example, where it can be used whole directly in the dish or soaked for 15 minutes and then made into a puree. It provides an excellent, acidic balance in sauces, marinades and chutneys – and a fresh twist in tea, lemonade and cocktails.
