MACEM

The mace is the beautiful red sheath or aril that surrounds the nutmeg itself. Our nutmegs and mace grow on up to 20-meter-tall nutmeg trees a stone's throw from our friend and collaborator Nihal's forest garden outside Kandy. The mace fruits are allowed to sit on the trees until they are fully ripe and fall to the ground on their own. They are then collected and the pulp is separated from the red sheath and the nut itself. Both the mace, whole nutmeg and ground nutmeg are dried and sent to us immediately after drying.

The taste is aromatic with notes of cinnamon, flowers and pepper and with a more delicate taste and scent than nutmeg. Use to season your spinach, fish dishes, shellfish, baked goods, desserts, drinks and for dishes where you would normally use nutmeg. Add in whole pieces or can be ground into a powder.
