CARNATIONS
Cloves from Sri Lanka are grown wild and picked when they are large, fully ripe and full of flavour. Our cloves are grown by our friend and partner Nihal Ellegals from Eko Land Produce, located in Wepatha, Digana outside Kandy. Here the cloves are handpicked, sorted and gently dried to a moisture content of 9-11%. This makes them extraordinarily aromatic and spicy with citrusy notes and a peppery, moderately sharp flavour.
Use the cloves whole, and simmered dishes such as stews and curries will get a tasty boost. They are also suitable in baked goods and pickles. We recommend that you always crush and pound your spices immediately before use, for example if you are going to use them in cakes or the like. This gives the best aroma and taste.
