Plum tarte tatin with Chai Spice
INGREDIENTS
250 g wheat flour
50 g powdered sugar
A good pinch of salt
175g butter
1 small egg
About 800 g plums
175g sugar
80g butter
2 tsp. CANDY SPICES Chai Spice
HOW TO DO IT
Mix the flour, icing sugar and salt in a bowl and rub in the butter until the mixture resembles breadcrumbs. Mix the dough with the egg until it just comes together. Roll into a ball, press flat and wrap in cling film. Let the dough rest in the fridge for at least an hour, preferably overnight.
Preheat the oven to 180C. Halve the plums, remove the stone and cut into quarters. Melt 175g sugar to a deep, golden caramel and stir in the butter and Chai Spice. Arrange the plums in the pan, as many as you can fit, and let the plums caramelise for 5-10 minutes.
Roll out the pastry and cut a circle to fit the pan. Place over the plums and press down along the edges. Place the pan in the oven and bake for 35-40 minutes, until the pastry is golden brown and the caramel is bubbling. Let the tart cool for 15 minutes on a wire rack, then turn it out onto a serving platter.
Serve with full-fat creme fraiche or a good vanilla ice cream.
