Pumpkin trifle with warm spices
INGREDIENTS
500g pumpkin
3 cloves
2 oranges
1/2 vanilla pod or 1 teaspoon vanilla sugar
7.5 dl sugar
7.5 dl water
1 dl dried cranberries
1 tsp. real Ceylon cinnamon, ground
HOW TO DO IT
Cut the pumpkin into nice, even cubes of about 2x2 centimeters. Cut the oranges into fillets. Boil water, orange juice, sugar, cranberries, cinnamon, cloves and vanilla, and pour the boiling water over the pumpkin. Taste the pumpkin and see if it seems tender, but with a little bite.
Cool the pickled pumpkins and serve them with skyr, yogurt, ice cream or something else.
