Tomato Chili Chicken
INGREDIENTS
800g chicken
3-4 tbsp Tomato Chili
1 onion, finely chopped
1 teaspoon ground ginger
3 cloves crushed garlic
1 teaspoon ground turmeric
1 teaspoon ground coriander
1 teaspoon ground cumin
Oil
1 can (400ml) coconut milk
Salt
Fresh lime
Green fresh chili
HOW TO DO IT
Marinate the chicken with Tomato Chili, onion, ginger, garlic, turmeric, coriander and cumin and 2 tsp salt for 30 min. Heat some oil in a suitable pan and brown the chicken on all sides for 5-6 minutes - make sure to get all the marinade and spices. Then add coconut milk and 2 dl water.
Bring the pot to a boil, then reduce the heat and simmer until the chicken is tender, about 30-40 minutes.
Season the sauce with salt and a little fresh lime juice and finally stir in some freshly cut green chili into the sauce.
Serve with rice, bread
